Here is a great recipe for you…we cannot get over how easy it is, and how delicious.
It takes very little prep and you have a big pot of yummy for a holiday gathering or just a nice dinner at home. You can change it up by using shrimp or tofu, just like at a restaurant. If you try it with the shrimp, put the shrimp in with the veggies for the second cook…it should get cooked perfectly!

Ingredients
- 2 tablespoons avocado or olive oil
- 2 chicken breasts diced
- 4 cloves garlic
- 1/2 cup pad thai sauce
- 3 cups water can use broth
- 1 package rice noodles
- 1 cup carrots matchstick
- 1 red pepper julienned
- 1 yellow pepper julienned
- 1/2 cup peanuts chopped
- 1/2 cup cilantro chopped
- 4 scallions diced
- 1 lime cut into wedges

Instructions
- Put the pot on sauté and add oil. When hot, add chicken and cook until no longer pink. Add garlic and stir. Add the water, soy sauce, and pad Thai sauce. Place noodles on the top of everything else. Pressure cook for 3 minutes, and then quick release the steam.
- Add the carrots, both peppers, and half the peanuts. Replace lid and pressure cook for one minute. Quick release again. Stir with tons to mix well. Serve with peanuts, cilantro, scallions and a wedge of lime.
