
I have been trying to simplify my meals, now that I live alone and it is summer and I want to play outside all the time…I just love it when my Instant Pot makes my life so much easier!
A couple of nights ago, I bought some really nice looking chicken breasts, with dreams in my head of what I would make with them…and then life happened and they did not get made that first night, and then the second night I was only hungry for a salad, so I thought…well, let’s just IP those babies up and see what happens. So, I had some limes and some delicious local honey sitting on my counter, and a little bit of cilantro waiting for me in the fridge…into the IP it went, and out came delicious moist chicken that can now be used for all sorts of lovely meals.
Shred it for tacos, cube it for a chicken salad, eat it just like it is. The flavor is excellent, and this stays very moist, especially if the chicken is stored with the liquid from the pot over it.

- 3 pounds chicken breasts 5-6 large breasts
- 2 limes squeezed for juice
- 1/4 cup honey more, if you like sweet
- 1/4 cup avocado or olive oil
- 1 handful chopped cilantro optional
- salt and pepper to taste

- Put all ingredients except for chicken into the liner of the Instant Pot. Stir well.
- Add the chicken breasts, layering if needed.
- Set the manual/pressure cook button for 10 minutes, and then make sure your toggle is set to sealing. Allow for a 10-15 minute natural pressure release. Turn off pot and remove lid. Using tongs, place chicken on a plate to cool to cube or shred. Store with the liquid over it for the best flavor.
