Chocolate Lava Cakes in the Instant Pot
This elegant little lava cake is a lovely dessert to set at your holiday table. These would be perfect for an intimate dinner on New Year's Eve, too! The ingredients go together quickly, and the Instant Pot makes short work of it - 9 minutes and you are ready to go!
Using softened butter, generously grease 4 ramekins. Swirl the sugar around each one to coat.
In a microwave safe bowl, melt the chocolate chips and the 1/2 cup of butter for a minute. Check to see if the chocolate is fully melted and if not, return to the microwave for 30 seconds to finish melting the chocolate chips.
Add the powdered sugar and stir to incorporate.
Add the eggs and the egg yolks and stir to incorporate.
Add the instant coffee and vanilla and stir in.
The add the flour and the salt, and stir to fully incorporate the flour into the mixture.
Distribute the batter into the four ramekins.
Put two cups of water in the bottom of the Instant Pot. Place trivet in as well.
Place three of the ramekins onto the trivet, and then balance the fourth ramekin on top of the other three. Lock the lid and set your toggle to sealing.
Use manual/pressure cook setting for 9 minutes. When done cooking, use a quick pressure release to rid the pot of the steam.
Remove the ramekins - careful! They are HOT! Put them on a towel on a table, and then use a small piece of paper towel or a cloth to very gently remove any moisture/condensation that remains on the top of the pudding.
After the ramekins have cooled for a few minutes, dust with powdered sugar through a mesh strainer or sifter.

The recipe down below was inspired by this one at Paint The Kitchen Red. I used a combination of semi-sweet and bittersweet chocolate just to give it a little more depth. All of our taste testers, who have very discerning palates, were pleased with the outcome…but, chocolate heated up in some way is always delicious!
Follow the directions below to get the batter mixed. Once the batter is ready to go, pour the batter into the prepared ramekins.
Make sure you put two cups of water in the bottom of your Instant Pot. I put hot water in to give me a head start on coming up to pressure.
Then, put in the trivet, and arrange the first three ramekins on the trivet. The last one will balance in the middle of the other three. Lock and seal your lid, and set the manual or pressure cook timer for 9 minutes. Once the timer goes off, do a quick release of the pressure. Remove the HOT ramekins to a plate or towel. If there is condensation or moisture on the top of the desserts, carefully dab it up with a paper towel. Then sprinkle some powdered sugar over the top of each pudding, and serve warm. These are delicious by themselves but would be stellar served with a little ice cream!
