  1. Turn on the sautee function of your Instant Pot and add the oil. Once the oil is hot, add the chopped onion. Cook until onion is soft and starting to brown and become translucent.
  2. Add the grated ginger and stir a couple of times. Deglaze the pan with a little of the broth, scraping off all the browned bits as you go.
  3. Add the rest of the broth and all of the spices and fish sauce. Stir well.
  4. Add the carrots, stir and make sure the carrots are all in the liquid.
  5. Lock on the lid, and set the toggle to sealing. Set manual/pressure cook for 12 minutes. When done cooking allow a ten minute natural pressure release.
  6. Carefully release the rest of the steam, and open the pot. Stir in the chopped cilantro and the coconut milk. Use an immersion blender to blend the soup until very smooth.
  7. Taste for seasoning, and serve hot.
