  1. Put the pot on sauté and add oil. When hot, add chicken and cook until no longer pink. Add garlic and stir. Add the water, soy sauce, and pad Thai sauce. Place noodles on the top of everything else. Pressure cook for 3 minutes, and then quick release the steam.
  2. Add the carrots, both peppers, and half the peanuts. Replace lid and pressure cook for one minute. Quick release again. Stir with tons to mix well. Serve with peanuts, cilantro, scallions and a wedge of lime.
