Put all ingredients except for chicken into the liner of the Instant Pot. Stir well.
Add the chicken breasts, layering if needed.
Set the manual/pressure cook button for 10 minutes, and then make sure your toggle is set to sealing. Allow for a 10-15 minute natural pressure release. Turn off pot and remove lid. Using tongs, place chicken on a plate to cool to cube or shred. Store with the liquid over it for the best flavor.
