Instructions
  1. Put beans right into liner of Instant Pot, or use a steamer basket for ease of removing. Cover with 8 cups of water. Manual pressure for 60 minutes, and use a natural pressure release of at least 10-15 minutes. Allow beans to cool, but they are great to use when still warm. Reserve some of the cooking water.
  2. Place the beans, tahini, lemon juice, olive oil, garlic and seasonings in the bowl of a food processor and then add 1 cup of the reserved water. Blend until smooth. Check the consistency and add more of the cooking water, if needed. Taste for seasonings.
  3. Place hummus in a bowl or on a plate and garnish with paprika or cumin, if desired, and serve with pita chips. This is great with a tomato and cucumber salad, in a pita bread, for sandwiches.
