  1. Set the Instant Pot to sauté and put in the stick of butter, just until it is melted. Throw in the two halves of the onion. Turn off the pot.
  2. Place all the washed tomatoes in the pot. Fill to the fill line, or even a little above. They reduce quickly under pressure. Lock on the lid and set the toggle to sealing. Set manual/pressure cook for 45 minutes. Allow a 10-15 minutes natural pressure release. Open lid and allow for some heat to escape.
  3. Using an immersion blender, blend the tomatoes into sauce. Push sautee and adjust to medium heat, and allow the tomatoes to cook for at least 30 minutes to cook down a bit. Using a funnel, put sauce into clean jars and seal. At this point, you can CAN them in a canner or refrigerate for up to two weeks if you are going to use right away.
