Instructions
  1. Melt the butter in the bottom of the Instant Pot liner set to saute or in a pan on the stove.
  2. While whisking constantly, add the flour to the butter and whisk for about 2 minutes, until the flour is browning and smells a bit nutty.
  3. Whisk in the milk, and continue to whisk while the mixture comes to a boil. After four or five minutes, the mixture will start to look like gravy. Remove from the heat, add the salt and pepper.
  4. Add the chopped egg whites, and taste for seasoning. Keep warm.
Toast
  1. Prepare toast to your liking, and place each piece of toast on a plate.
  2. Cover the toast with a generous helping of the white sauce.
  3. Sprinkle each piece with a handful of the fine egg yolk.
  4. Garnish with chopped chives, basil chiffonade, a sprinkle of parmesan or other cheese, or just add a little more salt and pepper.
